Whenever I think of comfort food, pasta comes to mind. It reminds me of my childhood and the giant mountains of spaghetti my mom would cook to feed all of us hungry mouths. Those days are long gone, but I still love eating pasta every once in a while.
This caramelized onion concoction just kind of fell into place while I was thinking about what to make for dinner. Slow cooked onions turn silky soft and sweet, and aren’t anything like their pungent raw version. For a different twist on caramelized onions, I decided to add regular button mushrooms to the onion sauté.
The result was divine! There really isn’t much need for a whole lot of seasoning. The slow cooking takes care of that!
Sprinkle some freshly grated parmesan, or not, along with a few pine nuts over the pasta and dig in!
- 3 to 4 thinly sliced sweet onions
- 2 cups thickly sliced mushrooms
- a little olive oil
- half a tablespoon of butter or vegan butter
- a pinch or two of sea salt
- a generous pinch of thyme
- a few hot pepper flakes
- freshly grated parmesan if you like
- a handful of toasted pine nuts
- freshly cooked pasta
Heat a cast iron skillet over medium-high heat.
Add a little olive oil and the butter to the hot pan.
Stir the onions into the pan and sauté for about 20 to 30 minutes.
Adjust the flame so the onions don’t burn and stir them every so often.
Next, add the mushrooms and mix them into the onions.
Sprinkle the salt, thyme and pepper flakes into the mixture.
Stir and continue to cook on medium heat until everything is meltingly
soft and nicely browned.
Taste for seasoning and mix into piping hot cooked pasta.
Sprinkle with parmesan and a few pine nuts if you like.
Add a green salad and you’ve got a fantastic meal!

It did feed the body and soul! Along with a nice green salad! I know that onions don’t agree with you, but have you ever tried them cooked slowly like this? 😉 When I mentioned yesterday that I was working on this post, I was wiping the tears of my face from slicing the onions! 😂 Happy Tuesday Marlene!
