Tasty Tuesday … Simple Winter Salad with Pears

When I looked out the living room window this morning, I noticed a package on our front step. Upon opening this lovely surprise, I discovered some delicious looking pears inside! For many years now we’ve received a beautiful box of fruit around Christmas time from a favorite friend of ours. She couldn’t have picked a better gift for us this year, since I’ve been mildly obsessed with the incredibly flavorful pears this fall. I wonder if all the winter rain last year had anything to do with that?!?

This salad is refreshing, bright and easy to prepare, which is why I made three times this past week, and yes, I will make this salad again tonight!!

Salads don’t always have to have leafy greens in them or be a major production. Sometimes, a handful of ingredients is all that’s needed. For this salad, I used precooked vacuum packed beets that are sold in just about every grocery store these days. Home cooked beets are tastier in my opinion, but there are times when convenience wins!

Here’s the recipe:

 

  • perfectly ripe pears
  • cooked or roasted beets
  • green onions
  • sea salt and freshly ground pepper
  • a drizzle of good oil or toasted sesame oil are nice
  • if using the sesame oil, a few freshly toasted sesame seeds are also nice in the salad

Slice the pears, the peeled beets and green onions.
Place everything in a bowl and drizzle a little oil and vinegar.
Season with salt and pepper and gently mix everything.
Chill until ready to serve.
